Jenny’s Halloween Sugar Cookies

jenny making Halloween sugar cookiesHALLOWEEN SUGAR COOKIES  Fast and fun project for kids of all ages.  RECIPE:  2/3 cup shortening, 3/4 cup sugar, 1/2 teaspoon grated orange peel, 1/2 teaspoon vanilla, 1 egg, 4 teaspoons milk, 2 cups flour, 1 1/2 teaspoon baking powder, 1/4 teaspoon salt.  Thoroughly cream shortening, sugar, orange peel and vanilla.  Add egg and beat til light and fluffy.  Stir in milk.  Sift together dry ingredients and blend in creamed mixture.  Divide dough in half.  Chill one hour.  On lightly floured surface roll half of dough to 1/8 inch.  Cut in desired holiday shapes with cookie cutters.  Place shapes onto greased cookie sheet.  Sprinkle with appropriate colored sugar sprinkles.  Bake at 375 about 6 to 8 minutes.  Cool slightly and remove from pan and onto cooling rack or paper towels on counter top or kitchen table.  Makes 2 dozen.  ***Can also not put sprinkles on before baking, and after cookies cool off decorate with any kind of frosting and use sprinkles or candies to decorate appropriately***

Jenny’s Halloween Ghost Cookies

How to make Halloween chocolate covered cookies

HALLOWEEN GHOST COOKIES
   Fast, fun and easy cookies for you and a child to do as a snack project together.  My little one took some for her classmates to school last year for Halloween.  Recipe is:  Bag of “Nutter Butter Cookies”, Bag of Chocolate chips, White Baking Chocolate.  Place wax paper on counter top or kitchen table.  Place half the package of chocolate into microwavable glass bowl.  Heat for 120 seconds.  Stir, replace for 30 seconds, stir and replace for additional 30 second intervals until chocolate is smooth and creamy.  Place bowl on heating plate and put cookies into chocolate, one or two at a time.  Flip cookie around in chocolate with a fork.  Once cookie is fully coated with chocolate, pick up cookie with fork and tap fork against bowl to remove excess chocolate.  Place cookie on wax paper.  After you have put about three cookies on the peice of wax paper, place two chocolate chips on top of cookie to look like ghost eyes.  Let cookies dry – chocolate will harden upon sitting.  Serve and enjoy.

How to Make Chocolate Covered Cherries

Chocolate Covered Cherry
5 lbs. confectioners’ sugar
1/4 tsp. vanilla
3 (12 oz.) pkgs. semi-sweet chocolate
chips
3/4 lb. shaved edible paraffin
1/2 lb. oleo or butter
1 can Eagle Brand sweetened condensed
milk
Maraschino cherries (about 200)
Round toothpicks

Mix together: Using your hands, mix the confectioners’ sugar, oleo, vanilla, and condensed milk. Cover and set aside. Drain the juice from the maraschino cherries, saving juice to use later in Kool-Aid, etc. Melt the chocolate chips and paraffin in the top of a double boiler. Mold cream mixture over cherries and dip in melted chocolate. Let dry to harden.

White Chocolate Peanut Butter Cookies


Take about 72 crackers (ritz, club, generic, etc).
Spread one cracker with creamy peanut butter
and cover with another cracker – like a sandwich.
**lay a piece of waxed paper on counter**
Melt 1/2 package of white (or dark) almond baker’s chocolate
- heat in microwave for 120 seconds – stir and heat 90 seconds
stir again. Place cracker sandwich into melted chocolate,
cover the cracker sandwich with the melted chocolate,
roll cookie over and drip cookie over bowl, holding the cookie with
a fork and then place on waxed paper. -  – - – makes 3 doz cookies.

******Can dip pretzels into the left over chocolate and place on waxed paper******

Peanut Butter Oatmeal Cookies
Preheat oven to 350 degrees Makes 4-5 dozen cookies 1 ½ cups flour 3 cups oatmeal ¾ cup + 2 Tbs soft butter ½ cup creamy peanut butter 2 eggs ½ tsp baking soda 1 ¼ cups sugar 1 ¼ cups packed brown sugar 2 tsp vanilla 3 tsp cinnamon Mix peanut butter and butter until smooth. Add vanilla, baking soda, cinnamon, sugar and brown sugar. Mix thoroughly. Add eggs and mix well. Add flour and mix well. Add oatmeal, one cup at a time. When all oatmeal is added, mixture should be thick. Drop by teaspoons on lightly greased pan. Bake 10-15 minutes.
